Mobile Unit Assistant
Job Purpose
The Mobile Unit Assistant assists the Mobile Unit Manager in the production of our Down South Fried Fish Meals, maintenance of the Food Truck and Trailer, and represents the Down South Fried Fish Co brand to our customer base.
Job Duties and Responsibilities
- Accurately take orders at the window and perform financial transactions with the customers with the point of sale system.
- Fill outstanding orders as needed, promptly and efficiently
- Aid in the frying of the fish and fries, including bringing in additional inventory from the stockpile to the cook station
- Be knowledgeable about our cooking processes and preparation. Ensure that we are in compliance with our food health authorities. (The manager is ultimately the responsible party on paper but we all must do our part in maintaining public safety and compliance.)
- Audit the drawer at the completion of a shift for accuracy, reset the drawer, and drop the deposit in the deposit safe.
- Give out samples to passersby and sell our products with enthusiasm.
- Perform the nightly reset of the trailer, including restocking the freezers, refrigerators, operating supplies, coolers, and food stores.
- Perform the nightly reset of the trailer including the cleaning of the floors, filtering the oil, cleaning the fryer from the day’s usage, refill the water tank, and wiping down/sanitizing all surfaces and handheld equipment.
- Perform the weekly (and as needed) deep clean of the trailer including a full flood out of the floors, scrubbing the walls, boiling out the fryers, cleaning the fryer vents, scrubbing and washing the outside of the trailer, and additional detail cleaning.
- As your proficiency progresses these responsibilities may be added:
- Driving the truck and trailer to and from service locations and dispatch
- Frying/Cooking the food
- Training additional part time employees or assistants in the basic job duties of the register, fill station, and “gopher” positions, especially at event locations
- Running a low volume meal shift solo (Only after a thoroughly demonstrated ability to function in all the work stations of the trailer AND safely drive the truck and trailer is this option available. This skill must be demonstrated before a Mobile Unit Assistant can be considered for a Mobile Unit Manager Position.)
- Additional tasks and responsibilities as assigned by the business owner or Mobile Unit Manager
Required Qualifications
Education

Experience
There is no minimum experience requirement for this position
Knowledge, Skills, and Abilities
- Working knowledge: Sufficient familiarity with customer service, including smiling, greeting, active listening for their orders, and suggestive selling
- General knowledge: Can perform basic math, especially in regards to making change, calculation cost, and building orders.
Preferred Qualifications
- ServSafe Certification: Actively ServSafe certified and familiar with current health code for the local and surrounding counties, including Greene, Christian, Webster, Wright, Barry, and Camden
- 1-2 Years Customer Service Experience: Preferably in retail, restaurant, or sales field
- Previous Experience Driving Truck/Trailer Professionally: Includes work on the family farm or driving for another company, i.e., landscaping company
Working Conditions
- Environment – Majority of the work is completed inside a climate-controlled trailer with running fryers and outside, which means there can be exposure to extreme heat/cold. (Especially heat)
- Must be able to stand on your feet for long periods of time, up to several hours consistently
- Must be able to stoop, bend, pivot, and step up into and out of the trailer
- Minimum Lifting Requirement – Must be able to lift a minimum of 25 pounds unassisted
- May include heavy physical effort like pushing our generator up and down a ramp, lifting heavy coolers into and out of trucks and trailers, etc
- This position is 100% travel – It’s a food truck, we literally travel to the customers, however, you will be expected to meet at the dispatch location every work day. Your work day begins and ends here.
- Work schedule is approximately 10AM – 9PM Monday through Thursday maintaining lunch and dinner services, the weekend schedule including Fridays, is based on cleaning needs and event scheduling.
WORK IS BASED ON AN EIGHT-MONTH WORK YEAR (Seasonal), BUT SALARY IS ANNUAL (Year Round)
